Easy Breezy Coconut Drink


I've always wanted to make one of these drinks, but had no idea how! It's pretty easy, and delicious! 1) You need to know how to crack a coconut. Go to your local grocery store and pick out a coconut that sounds like it has a good amount of milk in it (you'll use it later!) 2) On one end of the coconut are the "eyes" there is one that is soft enough to poke something through it (believe it or not, I used a chopstick.. but a screwdriver will work too) Once you poke through, you'll be able to drain the milk out into a glass. 3) Go outside, and on a hard surface (I used the edge of the concrete steps), hit the coconut along the "seam", or middle, rotating it each time you hit it. Within a few tries, it should break into two halves! ta da!!

Since my friend and I each used a half for our drink, I put a piece of aluminum foil in the little "eye" hole that was made earlier. Then I made a delicious smoothie full of fruit and yogurt, and added some of the coconut milk as well :-) Top it off with a fun umbrella and you've got yourself a Caribbean concoction!

p.s.s. Once you're finished with the drink, cut out the meat of the coconut (the white part) - it is DELICIOUS! Keep it in a little dish in the fridge for a healthy snack!
